Its been a while since i cooked at home, I have a cook who cooks my daily meals. I love to cook food but i hate it when i have to eat or cook alone…considering my son has 6 teeth only he cant give me much company.
So i invited my cousin over @JasonRGoveas who loves to cook and eat too. We cooked up a meal which took us just about an hour to prepare.
Here is a recipe of the chicken he prepared from what we had in the fridge…
Half a kilo chicken
Lemon juice – half teaspoon
For the Marinade
Chilli flakes (He emptied about 3 packets of chilli flakes we got with pizzas)
Honey – 1 tablespoon to offset the mustard pungency
Marinate the chicken with the mixture above and allow to rest for an hour or so before you allow it to cook in a shallow pan.
Stir occasionally and add the lemon juice
Allow the jus to thicken
Serve on a bed of mashed potatoes.
